Kidney Beans (Rajma) Salad

  • Boiled rajmah (kidney beans) 1 cup
  • Onion, chopped 1
  • Small tomato, chopped 1
  • Cucumber, sliced 1
  • Lemon juice 1
  • Chaat masala to taste

Method:

In a medium bowl add rajmah, onion, cucumber, tomato, and lemon juice and chaat masala. Mix well and serve.

Vegetable Stir Fry

Ingredients:

  • Medium onion sliced 1
  • Vegetable broth 1 tbsp
  • Medium cloves crushed garlic 4
  • Minced ginger 1 tbsp
  • Red bell pepper cut into 1/2 inch pieces 1
  • Sliced shiitake mushrooms (remove stems) 1 cup
  • Sliced green cabbage 2 cups
  • Extra firm tofu or Cottage Cheese cut into 1/2 inch cube 150 g
  • Soy sauce1 tablespoon rice vinegar 2 tbsp
  • Chopped cilantro 2 tbsp
  • Sesame seeds 1 tbsp
  • Salt and white pepper to taste

Method:

  • Heat 1 tablespoon broth in a stainless steel wok or 12 inch skillet
  • Stir fry onion for about 2 minutes in broth over medium high heat stirring constantly.
  • Add red pepper and mushrooms. Continue to stir-fry for another 2 minutes.
  • Then add garlic, ginger and continue to stir for another 2-3 minutes. Add cabbage, and rest of ingredients and cook for another 2 minutes. Sprinkle with sesame seeds.

Grilled Fish

Ingredients:

  • Pomphret 2 big
  • Garam masala 2 tsp
  • Coriander powder 2 tsp
  • Vinegar 4 tbsp
  • Ginger garlic paste 1 tbsp
  • Chilli powder To taste
  • Oil 1 tsp
  • Salt To taste

Method:

Rub the fish with salt, chili powder, garam masala, vinegar, coriander powder and ginger garlic paste. Keep it aside. Line a pan with oil and grill the fish and serve hot.
